Spicy Vegan Chickpea Burgers

Serves: 4

Prep Time:

Cook Time:

Ingredients;

1 tin of chickpeas

1 tin of sweetcorn

A small handful of fresh coriander

1 tbsp. Adam’s Original Spice Mix

3 tbsp. plain flour

Adam’s Original Chilli Infused Rapeseed Oil

A handful of spinach or 4 lettuce leaves

2 large tomatoes, sliced

Red onion, sliced

Pickles, sliced

4 seeded vegan burger buns

Optional:

Tomato ketchup

Devil’s Pleasure Hot Sauce

Mustard

Smashed avocado

Method;

  1. Drain the chickpeas and sweetcorn well and pat to remove moisture. Add to a food processor or blender, add the coriander leaves and stalks. Add the spice mix, flour and a pinch of salt and blend together – be careful not to blend too much as you want a good texture and not too smooth!
  2. Place the mixture on a floured surface and divide evenly and shape into four patties. Place in the fridge for 30 minutes.
  3. Add a tsp. of Adam’s Original Chilli Infused Rapeseed Oil to a large frying pan and allow to heat up. Place the patties in the pan and cook for 5 minutes on each side until you are left with a crispy, golden patty.
  4. The final step is to put the burgers together! Add any sauce you want (we have included some great options!), place the patty on top and add lettuce or uncooked spinach, tomato slices, sliced red onion and pickles! We recommend a drop of Devil’s Pleasure Hot Sauce to add a fiery kick!
