Ingredients
500g Pork Belly1 tsp Smoked Paprika (Barts recommended)
2 tbsp Adams Original Apple Chilli Jelly
1 tbsp Honey
Juice from 1 Lime
½ Small Tin of Sweetcorn
½ Avocado, diced
8 Cherry Tomatoes
A Handful of Blanched Green Beans or Mange Tout
A Splash of Adams Original Chilli Infused Olive Oil
A Splash of Adams Original Chilli Infused Balsamic Vinegar
A Handful of Roughly Chopped Parsley
Method
Pre heat the oven to 180° C.
Combine the Adams Original Apple Chilli Jelly, honey, smoked paprika and half the lime juice in a saucepan and heat over a low heat until the mixture is runny.
Remove the pan from the heat and add the pork belly to the saucepan and mix until the pork completely coated in the glaze.
Place the coated pork belly onto a baking tray and place in the pre heated oven. Leave for 45 minutes to roast, turning once during the cooking time, until the pork belly looks golden brown all over.
While the pork is cooking, throw the avocado, sweetcorn, cherry tomatoes, blanched beans and parsley into a bowl and mix together. Season with a splash of Adams Original Chilli Infused Olive Oil, Adams Original Chilli Infused Balsamic Vinegar and the remaining lime juice.
Serve the cooked pork straight from the oven with the salsa as a delicious garnish… and indulge!
