Preparation time: 5 minutes
Cooking time: 20-25 minutes
Cream cheese, fresh ewe's cheese or mascarpone to fill it
Smoked streaky bacon
Freshly chopped coriander leaves
Preheat the oven to 200°C/Fan 180°C/gas mark 6.
Cut the chilli in half, length way, scoop out the middle of the chilli including the membrane.
Fold the coriander into the cheese. Spoon the cheese mix into each chilli half.
Wrap a piece of bacon around each one covering the cheese. Secure with a cocktail stick.
Roast for 20-25minutes or until bacon is fully crisp.
